Key Lime Tart  7

A sweet, buttery tart shell filled with a key lime custard. Topped with key lime mousse, sprayed with green cocoa butter, then a key lime jelly is added in the center. We finish this pastry with chocolate decoration.

Dark Decadence  7

Three Layers of chocolate genoise cake, layered with dark chocolate mousse and covered in dark chocolate ganache.

Caribbean Mousse  7

Coconut dacquoise, mango jelly, pineapple compote and a layer of vanilla chocolate mousse, sprayed with green coco-butter and finished with chocolate decorations.

Gluten Free Bresilien Mousse Pastry  7

A flourless almond cake with diced walnut topped with milk chocolate mousse, a crunchy pecan praline and a creamy coffee custard. The pastry is glazed with a milk chocolate ganache and decorated with hand painted chocolate and gold flakes.
